Easy and flavorful Ratatouille.
Ingredients:
  • 1 large red onion, diced
  • 4 garlic cloves, thinly sliced
  • 2 dried chillies, roughly chopped
  • 1 large red capsicum, cut into 2cm pieces
  • 1 large eggplant, cut into 3cm pieces
  • 2 medium zucchini, roughly chopped
  • 40.00 ml red wine vinegar
  • 2 x 400g cans chopped tomatoes
  • 1 dried bay leaf
  • 5.00 gm caster sugar
  • 40.00 ml chopped fresh oregano leaves
Instructions:
  • In a large, heavy-based saucepan, heat oil over medium-high heat. Sauté onion, garlic, and chili for 2 minutes until onion softens. Add capsicum, eggplant, and zucchini. Cook for 4 minutes, stirring occasionally, until vegetables are just softened.
  • Pour in the vinegar and cook while stirring for 2 minutes or until the vinegar has evaporated. Add tomato, bay leaf, sugar, oregano, and 1/4 cup of cold water. Season with salt and pepper. Simmer covered for 15 minutes. Uncover and simmer for an additional 15 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened. Remove and discard the bay leaf. Serve and enjoy!
