Easy and delicious ravioli lasagna: layer frozen cheese ravioli with spinach, Romano cheese, and ricotta, bake with sauce.
Ingredients:
  • 2 cups ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
  • 1.5 cups grated Romano cheese
  • salt and pepper to taste
  • 0.25 cup spaghetti sauce
  • 1 (25 ounce) package frozen cheese ravioli
  • 0.5 cup spaghetti sauce
  • 0.5 cup grated Romano cheese
Instructions:
  • Preheat the oven to 375°F (190°C) and generously coat an 8x8-inch baking dish with cooking spray, then set aside.
  • Combine the creamy ricotta cheese, fresh spinach, 1 1/2 cups of savory Romano cheese, eggs, and a dash of salt and pepper in a bowl.
  • In the prepared baking dish, start with a generous layer of 1/4 cup of spaghetti sauce. Add a single layer of frozen ravioli on top. Spread a generous portion of ricotta mixture (about 1 cup) over the ravioli. Repeat these layers three more times, finishing with a final layer of frozen ravioli. Top the lasagna with 1/2 cup of spaghetti sauce and sprinkle the remaining 1/2 cup of Romano cheese. Cover the dish with foil before baking.
  • Place the casserole in the preheated oven and bake for 40 minutes until it bubbles. Remove the foil, bake for an additional 10 minutes to brown the cheese, and allow it to sit for 10 minutes before serving.
