Ravioli with Brussels sprouts and burnt butter sauce

Whip up a quick and delicious meal using store-bought ravioli.
Ingredients:
  • 250g Brussels sprouts, finely shredded
  • 400g pkt spinach and ricotta ravioli
  • 120g unsalted butter
  • 21.00 gm lemon juice
  • 20.00 ml fresh thyme leaves
  • 125.00 ml roasted hazelnuts, skinned and chopped
  • Finely grated parmesan (or vegetarian hard cheese), to serve
Instructions:
  • Prepare the ravioli according to the package instructions, then drain.
  • Cook the unsalted butter in a frying pan until golden, for about 5 minutes.
  • Squeeze in fresh lemon juice and sprinkle in fragrant thyme leaves. Toss in the sprouts and stir until they just start to wilt. Then, gently fold in the ravioli and coat everything in the flavorful mix.
  • Top with crunchy hazelnuts and freshly grated parmesan.
