Zucchini ribbons tossed with fresh veggies for a light and satisfying raw pasta.
Ingredients:
  • 4 large zucchinis
  • 500.00 ml fresh garden peas
  • 125.00 ml red capsicum, chopped
  • 1 large carrot, finely chopped
  • 250.00 ml cherry tomatoes, quartered
  • 40.00 ml fresh basil, chopped
  • 40.00 ml fresh curly parsley, chopped
  • 2 tsp lemon zest
  • Himalayan pink salt and pepper to taste
  • Fresh curly parsley, to serve
  • 312.50 ml raw cashews (soaked for 2 hours and rinsed thoroughly)
  • 187.50 gm water
  • 1/2 tsp coconut nectar
  • 1 clove garlic, roughly chopped
  • 65.63 gm lemon juice
  • 2.40 gm Himalayan pink salt
Instructions:
  • Use a vegetable peeler to create 1 cm wide zucchini strips resembling fettuccini in a large bowl. Mix in the rest of the pasta ingredients, toss thoroughly, and set aside.
  • In a blender, combine all sauce ingredients and blend on high speed until smooth. Pour over pasta and toss to coat evenly. Divide into 4 bowls and garnish with curly parsley before serving.
