Roast fresh sugar pumpkins and mix with pumpkin pie spice for a delicious homemade pie.
Ingredients:
  • 2 sugar pumpkins, halved and seeded
  • 4 eggs, beaten
  • 1 cup heavy whipping cream
  • 2 cups demerara sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon salt
  • 2 (9 inch) unbaked deep dish pie crusts
Instructions:
  • Preheat the oven to 325°F (165°C) and line a baking sheet with lightly oiled aluminum foil.
  • Place the pumpkin halves, cut sides down, on the baking sheet.
  • Roast in a hot oven until the flesh is tender, for about 40 minutes. Allow to cool before handling.
  • Bump up oven temperature to 425 degrees F (220 degrees C).
  • Transfer the pumpkin flesh into a large mixing bowl. Incorporate eggs, heavy cream, sour cream, demerara sugar, flour, pumpkin pie spice, and salt; blend until velvety. Fill pie crusts with the pumpkin mixture.
  • Bake until a toothpick inserted in the center comes out clean, around 45 minutes in the preheated oven.
