Whip up a quick creamy pumpkin cheese ball shaped like the real thing - perfect for dipping with veggies and crackers. Ready in just 10 minutes!
Ingredients:
  • 5 cups shredded extra-sharp white Cheddar cheese (20 oz)
  • 1 package (8 oz) cream cheese, softened
  • 2 logs (4 oz each) goat cheese, softened
  • 1/2 teaspoon pepper
  • 1 thick pretzel rod
  • 1 basil leaf, if desired
  • 1 thyme sprig, if desired
  • Assorted crackers or fresh vegetables, if desired
Instructions:
  • Combine cheeses and pepper in a medium bowl, blending with an electric mixer on low speed or mixing with a spoon until smooth. Shape the mixture into a large ball resembling a pumpkin. Use a metal spatula or table knife to smooth the surface. Optionally, create vertical grooves in the cheese ball with your fingertips.
  • Break off a 1/2-inch piece of pretzel and press it into the top of the cheese ball as a pumpkin stem. Add a basil leaf and a thyme sprig beside the pretzel. Serve with crackers and vegetables.
