Indulge in spiced cake bars topped with creamy cream cheese frosting.
Ingredients:
  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)*
  • 2 cups Gold Medal™ white whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 package (3 oz) cream cheese, softened
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
Instructions:
  • Preheat oven to 350°F and lightly grease a 15x10x1-inch pan with shortening.
  • In a large bowl, use an electric mixer to blend together eggs, granulated sugar, oil, and pumpkin until smooth. Add flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves, then mix well. Transfer the batter to a pan and spread evenly.
  • Bake until beautifully golden brown, for about 25 to 30 minutes. Let cool in the pan on a rack until completely set, approximately 2 hours.
  • In a medium bowl, use an electric mixer to blend cream cheese, butter, and vanilla until smooth. Slowly mix in powdered sugar, 1 cup at a time, until the frosting is smooth and easy to spread. Frost the bars, then cut them into 49 pieces. Keep them covered in the refrigerator.
