Pumpkin Bars

Whip up easy pumpkin bars using Bisquick® mix, top with rich cream cheese frosting.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 4 eggs, beaten
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1/2 cup raisins
  • 1 package (3 oz) cream cheese, softened
  • 1/3 cup butter or margarine, softened
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
Instructions:
  • Preheat the oven to 350°F, and generously grease a 15x10x1-inch pan with your choice of shortening or cooking spray.
  • In a large bowl, use an electric mixer to blend all the ingredients except for the raisins. Start on low speed for 30 seconds, scraping the bowl as needed. Then switch to medium speed for 2 minutes, scraping occasionally. Finally, gently fold in the raisins and pour the mixture into the pan.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely, approximately 2 hours.
  • In a medium bowl, use an electric mixer on low speed to blend together cream cheese, butter, milk, and vanilla until smooth. Slowly mix in powdered sugar until smooth. Spread the mixture over the bars, cut into 8 rows by 6 rows, and store covered in the refrigerator.
