Decadent pumpkin bars with white chocolate chips and walnuts - moist, rich, and perfect for pairing with coffee!
Ingredients:
  • 2.75 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 0.75 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1.5 cups pumpkin puree
  • 1 cup firmly packed dark brown sugar
  • 0.75 cup unsalted butter, melted and cooled
  • 1 large egg, at room temperature
  • 1 cup white chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9x13-inch pan with parchment paper, leaving an overhang on all sides.
  • Combine flour, pumpkin pie spice, salt, and baking soda in a bowl and whisk until fully mixed.
  • In a large bowl, combine pumpkin puree, white sugar, brown sugar, melted butter, egg, and vanilla, mixing until fully blended. Add half of the flour mixture and stir until just incorporated. Then add the remaining flour mixture and fold until just combined. Gently mix in white chocolate chips and walnuts. Spread the batter evenly in the prepared pan.
  • Bake in the preheated oven for about 45 minutes or until the top springs back lightly when touched. Allow it to cool completely for 30 to 45 minutes before slicing into 24 bars.
