Summery red blush apricot and sparkling white wine granita offers a refreshing, sweet treat.
Ingredients:
  • 1 cup white sugar
  • 1 cup water
  • 8 red blush apricots
  • 1.5 cups Prosecco (Italian sparkling white wine)
  • 3 tablespoons pomegranate seeds
Instructions:
  • Combine sugar and water in a large saucepan over medium-high heat. Stir occasionally until the sugar is fully dissolved, about 7 minutes. While the sugar mixture is cooking, prepare the apricots by washing, pitting, and mincing them.
  • Combine minced apricots with sugar and water, then simmer over medium heat until apricots have turned into a liquid, stirring and mashing consistently. Allow mixture to cool after removing from heat.
  • Add the Prosecco to the cooled apricot mixture, allowing it to bubble and double in volume. Stir gently until fully mixed and the bubbles have slightly reduced.
  • Transfer mixture to a freezer-safe container and freeze until beginning to solidify, about 1 to 2 hours. Scrape down the sides with a fork to mix granita every 30 minutes until course and grainy, approximately 6 hours. Avoid shaking the container; scraping forms the unique granita crystals.
  • Scoop the granita into 8 serving dishes using a large spoon. Sprinkle with pomegranate seeds. Enjoy immediately.
