"Pork chops with tangy cider vinegar red onion slices and creamy apricot-mustard dipping sauce."
Ingredients:
  • 1 red onion, sliced into rings
  • 0.25 cup cider vinegar
  • 1 tablespoon olive oil
  • 4 (5 ounce) boneless pork chops
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup sour cream
  • 0.25 cup Dijon mustard
  • 2.5 tablespoons apricot preserves
Instructions:
  • Finely chop the red onion slices until you have 1/3 cup of minced onion.
  • Place the leftover onion slices in a bowl and generously douse them with vinegar. Let them marinate for 10 minutes to enhance their flavor. Afterward, drain and dispose of the vinegar.
  • In a hot skillet, sear seasoned pork chops in olive oil until golden brown on both sides and cooked through, about 4 minutes per side. Use an instant-read thermometer to ensure they reach 145 degrees F (63 degrees C) in the center.
  • Place pork chops on individual plates and generously layer each with red onion slices.
  • Combine minced onion, sour cream, Dijon mustard, and apricot preserves in a bowl; serve alongside the pork chops.
