Pork chops with honey, mustard and whiskey glaze

Elevate your pork dinner with a tantalizing sweet and spicy glaze.
Ingredients:
  • 4 (about 150g each, 1.5cm thick) trim pork loin cutlets
  • 40.00 ml whiskey
  • 18.20 gm extra virgin olive oil
  • 23.40 gm wholegrain mustard
  • 28.60 gm honey
  • 2 tsp finely chopped fresh thyme
  • 2 tsp finely grated orange rind
  • 60ml (1/4 cup) fresh orange juice
  • Salt & freshly ground black pepper
  • Steamed sugar snap peas, to serve
  • Steamed broccolini, to serve
  • Steamed asparagus, to serve
  • Steamed mini brussels sprouts, to serve
Instructions:
  • Place the pork in a glass or ceramic dish. Combine whiskey, oil, mustard, honey, thyme, orange rind, and orange juice in a bowl. Pour this flavorful mixture over the pork. Cover and refrigerate for 1 hour to enhance the flavors.
  • Take out the pork from the marinade and place it on a paper towel-lined plate. Pour the marinade into a small saucepan and bring it to a boil over high heat. Reduce the heat to medium and simmer for 2-3 minutes until the sauce thickens slightly. Remove from the heat, season with salt and pepper to taste.
  • 1. Preheat a barbecue or chargrill on high heat. 2. Grill the pork for 3-4 minutes on each side for a medium cook or until desired doneness. 3. Place the cooked pork on a plate and cover it with foil. 4. Let it rest for 5 minutes before serving.
  • Plate the pork individually, generously drizzle with the flavorful sauce, and serve promptly alongside a side of steamed vegetables.
