Flavorful seared pork chops with garlic, honey, and mustard marinade.
Ingredients:
  • 3 tablespoons honey
  • 3 tablespoons stone-ground mustard
  • 5 cloves garlic, sliced
  • 1 teaspoon red chile flakes
  • 4 tablespoons extra-virgin olive oil, divided
  • 0.5 cup apple cider vinegar
  • kosher salt and ground black pepper to taste
  • 4 (1-inch thick) bone-in pork chops
Instructions:
  • In a small bowl, blend together honey, mustard, minced garlic, chili flakes, 3 tablespoons of olive oil, apple cider vinegar, salt, and pepper until fully mixed.
  • Add the pork chops to a resealable bag, pour in the marinade, seal the bag, gently massage to coat, and refrigerate for at least 1 hour.
  • Take the pork chops out of the marinade and place them on paper towels. Gently pat the chops dry with the paper towels. Keep the extra marinade aside for later use.
  • In a large cast-iron skillet, heat the remaining olive oil until shimmering. Sear the pork chops in batches if needed until both sides are dark golden brown, about 2 to 3 minutes per side. Reduce heat to low and cook until the internal temperature reaches 145°F (63°C), about 6 to 8 minutes. Transfer to a plate and rest for 5 minutes before serving.
  • Once the pork is done resting, transfer the remaining marinade to a skillet. Bring it to a boil and simmer until it thickens to your desired consistency, about 5 to 7 minutes. Drizzle over the pork chops before serving.
