Whip up sweet and tangy pork chops with red currant jelly and Dijon mustard in just 25 minutes. Minimal prep, maximum flavor!
Ingredients:
  • 4 pork chops
  • Salt
  • Pepper
  • 1/2 cup red currant jelly (or any red berry jelly, not jam)
  • 2 tablespoons of Dijon mustard
  • 1/4 cup apple cider vinegar or white vinegar
Instructions:
  • Dry the pork chops with a paper towel to help them brown nicely, then sprinkle with salt and pepper.
  • Sear the pork chops on both sides: In a large non-stick skillet over medium-high heat, cook the pork chops until lightly browned, about 1-2 minutes per side.
  • Prepare the sauce: Combine red jelly and mustard while the chops are browning.
  • Pour sauce generously over the pork chops in the pan. Lower the heat, cover, and simmer for 5-10 minutes until the pork is cooked through (thicker cuts may require additional time).
  • Remove the pork chops from the pan, then add vinegar. Bring the sauce to a boil on high heat, scraping up any delicious browned bits. Return any juices from the chops to the pan and spoon the flavorful sauce over the pork chops before serving.
