Juicy pork chops seared and cooked in tangy Asian sweet and sour sauce for a simple and delicious weeknight meal.
Ingredients:
  • 1 (8 ounce) can tomato paste
  • 1 cup pineapple juice
  • 0.5 cup raisins
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon apple cider vinegar
  • 0.5 tablespoon ground ginger
  • 0.5 teaspoon red pepper flakes
  • 1 pinch seasoned salt, or to taste
  • 2 bone-in pork chops
  • 2 tablespoons salted butter
Instructions:
  • Mix together the tomato paste, pineapple juice, raisins, brown sugar, cornstarch, vinegar, ginger, red pepper flakes, and seasoned salt in a medium bowl, and let the flavors meld together while you prepare the rest of the dish.
  • Wash pork chops and dry well. Heat butter in a cast iron skillet over medium-high heat. Sear chops on both sides until golden brown, about 5 to 8 minutes in total. Keep the skillet drippings.
  • Add the tomato paste mixture, lower the heat, and simmer for about 20 minutes until the sauce thickens to a gravy consistency and the pork is cooked through. Use an instant-read thermometer to ensure the pork chops reach an internal temperature of 145°F (63°C).
