Ingredients:
  • 4 tablespoons unsalted butter
  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon ground black pepper
  • 3 large eggs
  • 1 cup whole milk
Instructions:
  • In a 9-inch cast iron skillet, melt the butter in the preheated oven set to 400 degrees F (200 degrees C. Remove the skillet promptly once the butter has melted, before the oven reaches the set temperature, and tilt the skillet to coat all sides with the melted butter.
  • In a large bowl, mix together cornmeal, flour, sugar, baking powder, salt, and pepper until fully combined.
  • Thoroughly whisk eggs in a large bowl. Mix in milk and honey until combined. Add dry ingredients and stir until just mixed; then pour batter into the skillet. Gently fold batter to incorporate any melted butter.
  • Bake in the preheated oven for 20 to 25 minutes until a toothpick comes out clean when inserted into the center. Let it sit for 5 minutes before cutting and serving.
