Pork Riblets with Honey-Pepper Glaze

Whip up honey-pepper glazed pork riblets for a crowd-pleasing party appetizer!
Ingredients:
  • 1 (2-lb.) rack pork back ribs, cut in half lengthwise across bones
  • 3 teaspoons chili powder
  • 1 teaspoon celery salt
  • 1/2 teaspoon dry mustard
  • 1/3 cup honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon coarse ground black pepper
Instructions:
  • Prepare a 15x10x1-inch baking pan by lining it with foil and spraying the foil with nonstick cooking spray. Arrange the rack of ribs in a single layer on the prepared pan.
  • Combine chili powder, celery salt, and mustard in a small bowl; mix well. Coat one side of ribs with half of the spice mixture, then flip and coat the other side with the remaining spice mixture. Let the ribs sit at room temperature for 15 to 30 minutes.
  • Preheat the oven to 300°F. Bake the ribs for 1 hour. While the ribs are baking, mix all glaze ingredients in a small saucepan. Bring to a boil over medium heat, stirring occasionally.
  • Take the ribs out of the oven and let them cool for approximately 10 minutes. Then, raise the oven temperature to 350°F. Cut the ribs into individual riblets and place them back into the baking pan in a single layer. Brush the glazed side of the riblets.
  • Place back in the oven and bake at 350°F for 15 minutes. After, flip riblets and generously brush the other side with glaze. Bake for an additional 15 minutes. Remove any excess glaze. Serve while warm.
