Pepper-Honey Cedar Plank Salmon

Alaskan cedar-plank salmon marinated in bourbon, grilled to perfection. Perfect for fishing trips with the family.
Ingredients:
  • 2 untreated cedar planks
  • 0.25 cup pineapple juice
  • 0.33333334326744 cup soy sauce
  • 2 tablespoons white vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 0.75 cup honey
  • 0.25 cup packed brown sugar
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • 6 (6 ounce) skinless, boneless salmon fillets
  • 1 pinch salt and pepper to taste
Instructions:
  • Submerge the cedar planks in warm water for 1 to 2 hours, optionally add a splash of bourbon for extra flavor.
  • In a saucepan over medium-high heat, combine pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey. Bring to a simmer. Lower the heat to medium-low, then stir in sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. Simmer and stir occasionally until the sauce thickens into a syrupy consistency, about 15 minutes. Set aside.
  • Preheat the outdoor grill to medium heat. Place the planks on the grate and cook when they begin to smoke and crackle slightly.
  • Season the salmon with a hint of salt and pepper. Grill the fillets on cedar planks, cover, and cook for 10 minutes. Drizzle some sauce over the salmon and cook for an additional 5 minutes until the fish is opaque. Serve with the extra sauce on the side.
