Delicious sourdough cinnamon rolls made with buttermilk dough, filled with sweet cinnamon sugar paste, and baked in a cast iron skillet.
Ingredients:
  • 3 cups all-purpose flour, plus more as needed, divided
  • 2 cups buttermilk
  • 1 cup unfed sourdough starter
  • 2 tablespoons butter, cubed
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon baking soda
  • 6 tablespoons butter, melted
  • 0.5 cup brown sugar
  • 2 tablespoons ground cinnamon
Instructions:
  • In a glass bowl, combine 3 cups of all-purpose flour, buttermilk, sourdough starter, 2 tablespoons of cubed butter, and white sugar. Cover the bowl and let it rise in a warm area until doubled in size, about 8 to 12 hours.
  • Preheat the oven to 350°F (175°C).
  • Mix the baking powder, salt, and baking soda in a small bowl, then incorporate it into the flour mixture.
  • Knead the dough until it's smooth and not sticky, adding flour as necessary. Roll out the dough to a thickness of 1/4 to 1/2-inch using a floured rolling pin.
  • Mix melted butter, brown sugar, and cinnamon until smooth and paste-like. Evenly spread the sugary paste onto the rolled dough.
  • Shape the dough into a cylinder, then slice it into 1/2-inch pieces using dental floss or a serrated knife. Place the rolls in a cast iron skillet.
  • Bake cinnamon rolls until they are beautifully golden brown, for 20 to 30 minutes in the preheated oven.
