Sourdough Cinnamon Raisin Bread

Artisan sourdough cinnamon raisin bread with a homemade starter.
Ingredients:
  • 1 cup mature sourdough starter
  • 1 egg
  • 2 tablespoons margarine, softened
  • 2 teaspoons margarine, softened
  • 1.6666667461395 cups unbleached all-purpose flour
  • 0.33333334326744 cup raisins
  • 2 tablespoons white sugar
  • 2 teaspoons white sugar
  • 0.25 cup white sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons milk
Instructions:
  • In a bread machine, layer sourdough starter, egg, margarine, flour, raisins, sugar, and salt. Run the Dough cycle for about 90 minutes. Take out the dough when the cycle is finished.
  • Transfer the dough into a lightly greased bowl and cover it with a towel. Let it rise undisturbed in a draft-free spot until it doubles in size, which will take 8 hours up to overnight.
  • Combine sugar and cinnamon in a small bowl.
  • Place the dough on a floured surface, then roll it into a 9-inch wide by 1/2-inch thick rectangle. Brush with milk, sprinkle with cinnamon-sugar, and tightly roll it into a log. Put the log in a greased 9x5-inch loaf pan and let rise until it reaches at least 1 inch above the rim, approximately 1 hour.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake the loaf in the preheated oven until it turns a beautiful golden brown, for around 45 minutes.
