Delectable sweet and sour comfort dish, perfect with pork chops or sausages. Irresistibly fragrant and comforting, it gets even better as leftovers.
Ingredients:
  • 1 teaspoon olive oil
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • salt and pepper to taste
  • 1 tablespoon white sugar, or to taste
  • 2 tablespoons cider vinegar
  • 1 head green cabbage, cored and chopped
  • 2 large Granny Smith apples - peeled, cored and thickly sliced
  • 0.5 cup chicken stock, or as needed
  • 0.5 teaspoon coriander seeds
  • 1 pinch nutmeg
  • 0.5 cup sour cream
Instructions:
  • In a large, heavy-bottomed pot or Dutch oven over medium heat, warm olive oil. Add bacon and cook, stirring, until fat is rendered and bacon is lightly browned but still slightly soft, about 5 minutes. Transfer bacon to a small bowl using a slotted spoon, keeping the bacon fat in the pot. Pour off any extra bacon fat according to your preference.
  • Add the onion to the pot and sauté until translucent over medium-high heat. Season with salt and pepper. Sprinkle in sugar, then add vinegar (be cautious of the fumes). Deglaze the pan, scraping up the flavorful brown bits. Mix in the cabbage until well combined.
  • Simmer cabbage until reduced and slightly soft, about 6 to 8 minutes, then mix in apples, stock, and coriander seeds. Cover, simmer on medium low for at least 30 minutes, stirring occasionally. Adjust stock as necessary and cook until cabbage is tender but still intact.
  • Uncover and stir in the flavorful bacon and its juices right before serving. Cook over medium-high heat until the liquid reduces to a syrup and the mixture is steaming hot, for about 5 minutes. Take off the heat, mix in nutmeg, and gently fold in the sour cream. Enjoy the goodness!
