Creamy dressing with briny capers enhances decadent salmon.
Ingredients:
  • 1 lemon, rind finely grated, juiced
  • 39.60 gm fresh aioli
  • 37.60 gm sour cream
  • 40.00 ml drained baby capers
  • 1 green apple, cut into matchsticks
  • 300g red cabbage, thinly sliced
  • 250g savoy cabbage, thinly sliced
  • 125.00 ml fresh mint leaves, chopped
  • 62.50 ml fresh dill sprigs
  • 62.50 ml fresh chives, chopped
  • 4 (about 150g each) skin-on salmon fillets
  • Extra virgin olive oil, to serve
  • Lemon cheeks, to serve
Instructions:
  • In a small bowl, mix together lemon rind, half of the lemon juice, aioli, sour cream, capers, and season well. Whisk until fully combined.
  • In a large bowl, combine the apple with the remaining lemon juice and toss. Add in the cabbage, mint, dill, chives, and aioli mixture. Toss everything together until well combined.
  • In a large non-stick frying pan over medium heat, heat oil. Pat salmon skin dry with paper towel, season, and cook skin-side down for 2 minutes. Flip and cook for 2-3 more minutes for medium doneness or until cooked to your preference.
  • Plate the remoulade and salmon mixture evenly on individual plates, then generously drizzle with additional oil. Accompany with lemon wedges for squeezing over the dish before serving.
