Grilled salmon with apple slaw

Savor a light and nutritious dish of fresh salmon paired with crisp apple slaw.
Ingredients:
  • 36.40 gm olive oil
  • 550g packet atlantic salmon (4 pack)
  • 2 Jazz apples, cored, julienned
  • 1 small celeriac, peeled, cut into thin batons
  • 250.00 ml flat-leaf parsley leaves, plus extra to serve
  • 61.88 gm whole egg mayonnaise
  • 5.90 gm Dijon mustard
Instructions:
  • In a big bowl, combine apple, celeriac, and parsley. Mix mayonnaise and mustard together, season with salt and pepper. Pour the dressing over the apple mixture and toss until well combined.
  • In a hot frying pan, crisp up seasoned salmon skin for 4 minutes. Flip and cook for an additional 2 minutes until golden. Serve alongside apple slaw.
