Cabbage, apple and poppy seed salad recipe

Whip up a delicious creamy cabbage and apple salad with herbs and poppyseeds - a quick, light, and impressive dish!
Ingredients:
  • 100g walnut
  • 125ml buttermilk
  • 100g mayonnaise
  • 20.00 ml sherry vinegar or apple cider vinegar
  • 23.40 gm Wholegrain Mustard
  • 1/2 small savoy cabbage, shredded
  • 1/2 small red cabbage, shredded
  • 1 fennel, finely shaved
  • 1 small green apple, thinly sliced
  • 1 small firm green pear, thinly sliced
  • 250.00 ml mint leaves
  • 125.00 ml dill sprigs
  • 20.00 ml poppy seeds
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray with parchment paper.
  • In a medium bowl, combine walnuts and drizzle with maple syrup. Season, then toss to coat evenly. Spread mixture over a lined tray and bake for 4-6 minutes, turning occasionally, until walnuts are caramelized. Allow to cool before serving.
  • Combine buttermilk, mayonnaise, vinegar, and mustard in a small bowl and whisk until thoroughly mixed. Season to taste.
  • Layer the walnuts, cabbage, fennel, apple, pear, mint, and dill beautifully on a large serving platter. Generously drizzle with the flavorful buttermilk mixture.
  • Garnish generously with poppy seeds and serve promptly.
