Braised red cabbage with apple and walnuts

Crunchy walnut cabbage side dish.
Ingredients:
  • 55g (1/2 cup) walnut halves, coarsely chopped
  • 50g butter
  • 1 brown onion, halved, thinly sliced
  • 1 kg cabbage
  • 125ml (1/2 cup) apple juice
  • 20.00 ml red wine vinegar
  • 1 dried bay leaf
  • 1 apple, peeled, cored, coarsely grated
  • Salt & freshly ground black pepper
Instructions:
  • 1. Heat a small frying pan over medium heat, then add the walnuts and cook, stirring occasionally, for 5 minutes until they are lightly toasted. Remove from heat and set aside.
  • In a large saucepan, melt the butter over high heat until foamy. Stir in the onion and cook for 5 minutes until soft. Toss in the cabbage and cook for 1 minute until just tender. Pour in apple juice, vinegar, and add the bay leaf. Lower the heat, cover, and cook for 40 minutes, stirring occasionally, until the cabbage is tender.
  • Cook the apple, stirring occasionally, for 5 minutes or until it's heated through. Season to taste with salt and pepper.
  • Transfer the flavorful cabbage mixture into a beautiful serving dish and generously sprinkle with crunchy walnuts for an exquisite presentation.
