Braised red cabbage with crispy bacon and sweet apples creates a tasty and colorful side dish.
Ingredients:
  • 3 tablespoons coconut oil, or as needed
  • 4 slices bacon, chopped
  • 2 cloves garlic, minced, or to taste
  • 1 head red cabbage, chopped
  • 0.25 cup brown sugar
  • 2 cooking apples (such as Cortland or Gala) peeled and chopped
Instructions:
  • In a large skillet, heat the coconut oil over medium heat. Sauté the bacon, onion, and garlic until fragrant, about 5 minutes. Add the cabbage to the bacon mixture, toss to coat, and cover. Reduce heat and cook until cabbage begins to soften, stirring occasionally, about 10 minutes.
  • Combine cider vinegar and brown sugar in a bowl and pour over cabbage mixture. Add apples, cover, and cook for about 35 minutes, stirring occasionally, until most of the liquid evaporates and cabbage is tender. Remove from heat, let stand covered for 5 minutes, then season with salt and pepper.
