Braised red cabbage with apples

Prepare a festive winter side dish with warm spices for holiday celebrations.
Ingredients:
  • 9.20 gm olive oil
  • 20g butter
  • 1 brown onion, coarsely chopped
  • 2 Granny Smith apples, peeled, cored, coarsely chopped
  • 1/2 red cabbage, cored, thinly shredded
  • 125ml (1/2 cup) red wine
  • 2 tsp fresh thyme leaves
  • 40.00 ml redcurrant jelly
Instructions:
  • In a large saucepan over medium heat, sizzle the oil and butter until fragrant. Sauté the onion and apple until golden, about 5 minutes. Pour in the cabbage and wine, allow to simmer until reduced, approximately 3 minutes. Finish by folding in the thyme.
  • Lower the heat to a gentle simmer, cover, and cook while stirring occasionally for 15-20 minutes until tender. Add redcurrant jelly and stir until melted.
