Whip up these flavorful pork steaks for a quick and satisfying meal that's perfect for leftovers.
Ingredients:
  • 24.40 gm fish sauce
  • 28.00 gm red curry paste
  • 8 small pork schnitzels (about 80g each)
  • 18.40 gm sunflower or rice bran oil
  • 48.80 gm fish sauce
  • Juice of 1 lime
  • 5.00 gm caster sugar
  • 250.00 ml coriander leaves
  • 125.00 ml Vietnamese mint leaves*
  • 1 small red capsicum, thinly sliced
  • 250.00 ml pea tendrils*, or roughly chopped snow pea sprouts
Instructions:
  • In a large bowl, mix fish sauce and red curry paste, then add pork and toss to coat thoroughly.
  • Heat the oil in a spacious frypan over medium-high heat. Sear the pork schnitzels in batches for 1-2 minutes per side. Keep covered to stay warm as you assemble the herb salad.
  • In a large bowl, combine the fish sauce, oil, lime juice, and sugar, then add the rest of the ingredients and toss to combine. Serve the herb salad with the pork.
