Red Flannel Hash

Classic New England red flannel hash: diced potatoes, beets, corned beef sautéed in onions and butter.
Ingredients:
  • 4 tablespoons butter
  • 2 cups chopped cooked corned beef
  • 1 1/2 cups chopped cooked beets*
  • 1 1/2 cups chopped cooked potatoes
  • 1 teaspoon Worcestershire sauce (optional, and use gluten-free Worcestershire sauce if cooking gluten-free)
  • 1/4 cup (packed) chopped fresh parsley (optional)
  • Freshly ground black pepper to taste
Instructions:
  • To caramelize the onions, heat butter in a cast iron frying pan over medium-high heat. Sauté the onions until they turn translucent, for a couple of minutes.
  • Combine the corned beef, potatoes, and beets in the pan. Spread mixture evenly. Press down with a spatula to brown. Avoid stirring. Once one side is nicely browned, flip sections over. Add more butter if it sticks.
  • Once nicely browned, take the pan off the heat. Add Worcestershire sauce, if desired. Mix in fresh chopped parsley, if desired, and sprinkle with freshly ground black pepper to your liking. The corned beef should provide sufficient salt, but adjust to taste if needed. Enjoy on its own or with fried or poached eggs.
