Red Reuben Hand Pies

Delicious hand pie inspired by a German restaurant's twist on a Reuben sandwich using red cabbage.
Ingredients:
  • 2 (9 inch) unbaked pie crusts
  • 6 tablespoons Thousand Island salad dressing
  • 1 egg
  • 1 tablespoon milk
  • 1 cup shredded corned beef
  • 6 slices Swiss cheese, cut to fit
  • 0.75 cup pickled red cabbage, well drained
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet lined with parchment paper.
  • On a lightly floured surface, roll out pie crusts and cut each into three 6-inch rounds. Evenly spread Thousand Island dressing over the rounds, leaving a 1/2-inch border.
  • Combine the egg and milk to create a luscious egg wash, then delicately brush it over the borders.
  • Place a generous amount of corned beef in the center of each of the 6 rounds of dough. Add Swiss cheese and red cabbage on top. Fold the dough to form a semi-circle, ensuring the filling is enclosed. Seal and crimp the edges with a fork.
  • Make two small slits on top of each hand pie to let steam out. Use the remaining egg wash to brush the tops of the pies. Place the pies on the prepared baking sheet.
  • Bake the pies in the preheated oven until the crust is beautifully golden brown and cooked through, for 17 to 20 minutes. Serve warm after removing them from the baking sheet.
