Delicious Indian lentil stew.
Ingredients:
  • 18.20 gm peanut oil
  • 2 medium brown onions, thinly sliced
  • 1 garlic clove, crushed
  • 20.00 ml ground coriander
  • 1 tsp ground turmeric
  • 500.00 ml red lentils
  • 400g can crushed tomatoes
  • 50g baby spinach, trimmed, chopped
  • 82.50 ml fresh coriander leaves
  • 4 chapati breads, warmed (see note)
Instructions:
  • In a saucepan over medium heat, sauté onion in oil until soft, about 5 minutes. Add garlic, coriander, cumin, and turmeric, and cook for another minute until fragrant.
  • Combine lentils, tomato, and 2 1/2 cups of cold water in a pot and bring to a boil. Lower the heat and simmer for 20 minutes, stirring occasionally until lentils are tender. Stir in spinach and cook for an additional 2 minutes until wilted.
  • Garnish the lentil mixture with fresh coriander leaves and sprinkle with black pepper. Serve alongside warm chapati bread.
