Red Ripperz lamingtons recipe

Innovative twist on classic lamingtons with Allen's lollies Red Ripperz for a fun and delicious treat.
Ingredients:
  • 200ml thickened cream, plus 2 tbs, extra
  • 14 Allen’s Red Ripperz lollies
  • 450g packet double unfilled slab sponge cakes
  • 450g (3 cups) icing sugar mixture
  • 50g butter, at room temperature
  • 125ml (1/2 cup) hot water
  • 130g (1 1/2 cups) desiccated coconut
Instructions:
  • Combine the cream and 6 Red Ripperz in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir frequently and cook for 8 minutes until the candies have melted entirely. Transfer the creamy mixture to another bowl, let it cool for 20 minutes, then refrigerate for 2 hours until chilled.
  • Beat the cream mixture with electric beaters until firm peaks form. Transfer 1/4 cup of the mixture into a piping bag fitted with a small fluted nozzle. Set aside. Using a large serrated knife, remove the brown crust from the sponge cakes. Place one sponge cake on a baking tray and spread the remaining cream mixture over it. Top with the other sponge cake and refrigerate the tray for 1 hour to slightly firm up.
  • Sift icing sugar into a bowl, then add butter. Pour hot water over to melt butter and stir until smooth. Place 6 Red Ripperz and extra cream in a microwave-safe bowl. Microwave on High for 1 minute, stirring halfway, until melted. Mix into icing sugar mixture until smooth.
  • Cut the sponge into 8 squares. Spread coconut on a plate. Dip a sponge square into the icing, allowing excess to drip. Roll in coconut, press to coat. Transfer to a wire rack. Repeat with remaining squares. Chill for 15-20 minutes.
  • Prepare a baking tray with parchment paper. Place the remaining Red Ripperz in a microwave-safe bowl and microwave on High for 1 minute, stirring halfway until melted. Stir until smooth and be cautious as it will be hot. Drop 8 dollops of the melted Red Ripperz onto the tray. Use the back of a spoon in a swiping motion to spread each dollop for a brushstroke effect. Let it sit for 15 minutes to set.
  • Spoon the remaining cream mixture on top of each lamington in a swirl pattern. Top with the decorative Red Ripperz brushstrokes.
