Red Ripperz vanilla slice recipe

Flaky pastry with pink custard and Allen's lollies, perfect for parties. Make ahead with pre-made pastry for a nostalgic treat. Chill before serving for best results.
Ingredients:
  • 3 sheets frozen puff pastry, just thawed
  • 11 Allen’s Red Ripperz lollies
  • 300ml ctn thickened cream
  • 70g (1 ⁄2 cup) cornflour
  • 4 egg yolks
  • 55g (1/4 cup) caster sugar
  • 500ml (2 cups) milk
  • 50g unsalted butter, chopped
  • 300g (2 cups) pure icing sugar
  • 5.00 gm butter, at room temperature
  • 41.20 gm milk
  • Pink food colouring, to tint
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line a baking tray with baking paper. Place a sheet of pastry on the tray, prick with a fork, cover with another sheet of baking paper, and a second tray. Bake for 15-20 minutes or until golden. Cool on a wire rack before repeating with remaining pastry.
  • Place baking paper in a 23cm square cake pan, making sure to leave enough paper to hang over the sides.
  • Begin by chilling 1 Red Ripperz in the freezer. Next, roughly chop the remaining lollies. In a heatproof bowl set over a saucepan of simmering water (ensuring the bowl doesn't touch the water), combine the chopped lollies and cream. Cook and stir for 8 minutes until completely melted and well mixed. Take it off the heat.
  • In a saucepan, whisk together cornflour, egg yolks, sugar, and 125ml (1/2 cup) milk until mixture is smooth. Add butter and the remaining 375ml (1 1/2 cups) milk. Cook over medium heat for about 5 minutes, stirring constantly until the mixture thickens. Finally, whisk in the lolly mixture until smooth.
  • Line the prepared pan with a piece of pastry, cutting to size with a serrated knife. Spread half of the pink custard over the pastry. Repeat the layers, ending with another layer of pastry. Chill in the fridge for 4 hours until firm.
  • Make a sweet icing by mixing sugar, butter, and a splash of milk in a heatproof bowl until it forms a paste. Place the bowl over a saucepan of simmering water and stir gently for 2-3 minutes until it becomes smooth. Take it off the heat and mix in your chosen color.
  • Cover the slice with icing, then crush frozen Red Ripperz in a plastic bag using a rolling pin to create small pieces. Sprinkle the pieces over the icing and let it set.
