Red Velvet Espresso and Cream Swirled Brownies

Decadent red velvet coffee chocolate brownies with a beautiful cream cheese swirl made using Betty Crocker™ Supreme original brownie mix.
Ingredients:
  • 6 oz (from 8-oz package) cream cheese, softened
  • 1/3 cup sugar
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1 egg, separated, yolk reserved for brownie batter
  • 1 teaspoon vanilla
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • Reserved egg yolk
  • 2 teaspoons instant espresso coffee powder
  • 1 tablespoon liquid red food color (from 1-oz bottle)
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan) and grease the bottom of a 9-inch square pan with shortening or cooking spray. In a medium bowl, stir together cream cheese and sugar until smooth. Then, mix in flour, egg white, and vanilla until well blended. Set mixture aside.
  • Prepare the brownie batter following the instructions on the box, then mix in the reserved egg yolk, espresso coffee powder, and food coloring until the batter transforms into a luscious red hue. Spread the batter evenly in the pan.
  • Place spoonfuls of filling evenly on top of the batter in a 4x4 grid. Use a knife to create a swirled design by dragging it through the mixture in five horizontal lines, then five vertical lines.
  • Bake for 28 to 32 minutes until a toothpick inserted in the center comes out almost clean. Let it cool on a rack for 30 minutes, then refrigerate for at least 1 hour until chilled. Cut into 16 squares and store covered in the refrigerator.
