Indulgent red velvet cake with cream cheese frosting and strawberries, ideal for any celebration.
Ingredients:
  • 3 cups all-purpose flour
  • 1.5 tablespoons unsweetened cocoa powder
  • 1.5 cups white sugar
  • 1 cup vegetable oil
  • 4 eggs, separated
  • 1.5 tablespoons vanilla extract
  • 1 teaspoon white vinegar
  • 1 drop food coloring, or as desired
  • 1 cup buttermilk
  • 1.5 cups whole milk
  • 1 tablespoon lemon juice
  • 5 ounces cream cheese
  • 0.5 cup butter, softened
  • 7 fresh strawberries, sliced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you prep two 9-inch cake pans by lightly greasing them; add flour if needed for a smooth bottom.
  • In a bowl, combine 3 cups of flour with cocoa powder, baking soda, and salt. Give it a good whisk until fully blended.
  • In a mixing bowl, whip 1/2 cup of butter with an electric mixer until smooth and creamy. Add 1 1/2 cups of sugar and continue to beat until creamy for about 2 minutes. Then, pour in vegetable oil and beat until well combined for about 30 seconds.
  • Mix in egg yolks, vanilla extract, vinegar, and sufficient food coloring for desired color. Add flour mixture and buttermilk alternately on low speed until just combined without overmixing.
  • Whisk egg whites in a separate bowl until fluffy; gently fold them into the batter. Transfer the batter into the prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes until a toothpick comes out clean. Avoid overbaking. Cool cakes in pans for 10-20 minutes, then transfer to a wire rack or serving plate to cool completely.
  • Combine sugar, flour, and salt in a saucepan, whisk to blend. Gradually whisk in milk until smooth. Heat over medium, stirring until thickened. Transfer to an airtight container and refrigerate for about 1 hour until chilled.
  • In a mixing bowl, combine frosting with lemon juice and vanilla extract using an electric mixer on high speed. Gradually add cream cheese, followed by butter, and mix until a thick frosting forms. Transfer to an airtight container and refrigerate if not using right away.
  • Spread a layer of frosting on the cooled cake and evenly arrange sliced strawberries between the layers.
