Red wine & chocolate tart

Enhance the tart with a splash of fruity red wine for extra flavor and richness.
Ingredients:
  • 300g pkt dark chocolate shortcrust pastry (see note)
  • 2 eggs
  • 100g caster sugar
  • 5.00 gm cornflour
  • 5.00 gm ground cinnamon
  • 10.00 gm cocoa, plus extra to dust
  • 250ml red wine
  • 300ml thickened cream
Instructions:
  • Preheat the oven to a toasty 190°C.
  • Roll out the pastry until it is large enough to line a 22cm loose-bottomed tart pan, then refrigerate for 15 minutes.
  • Place a sheet of baking paper over the pastry and fill it with either pastry weights or uncooked rice. Bake in the oven for 8 minutes. Remove the paper and weights, then bake for an additional 5 minutes until the pastry is dry. Let it cool for a bit before using.
  • In a bowl, combine eggs and sugar, then sift in cornflour, cinnamon, and cocoa. Gently whisk until well mixed but not frothy. Stir in wine and 200ml cream until combined. Pour mixture into the tart case and bake for 20-25 minutes until it sets. Allow to cool slightly before serving.
  • Whisk the remaining 100ml cream until soft peaks form.
  • Sprinkle cocoa powder over the tart before slicing and serving with freshly whipped cream.
