Bacon-browned pork roast roasted with veggies, herbs, red wine, and mushrooms.
Ingredients:
  • 3 tablespoons bacon drippings
  • 3 pounds pork roast
  • 0.25 cup butter
  • 2 carrots, diced
  • 1 tablespoon chopped fresh parsley
  • 1 bay leaf
  • 0.125 teaspoon pepper
  • 1.5 tablespoons tomato paste
  • 1.5 tablespoons sugar
  • 1.5 cups red wine
  • 16 ounces fresh mushrooms, sliced
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a large skillet over medium-high heat, sizzle bacon drippings and brown the roast on all sides. Transfer the roast to a casserole dish. Add butter, garlic, and carrots to the skillet, then reduce to medium heat. Mix in parsley, bay leaf, salt, pepper, tomato paste, and sugar. Pour in red wine, stir well, and pour over the pork roast.
  • After baking for 1 hour in a preheated oven, arrange mushrooms around the roast and continue baking for another 30 minutes.
