Slow cooker pork pot roast with red wine and garlic: A cozy, tender dish for chilly nights or any time.
Ingredients:
  • 0.5 cup chopped onion, or more to taste
  • 2 tablespoons minced garlic, or more to taste
  • 1 quart hot water
  • 4 cubes chicken bouillon
  • 1 (3 pound) pork roast
  • 1 tablespoon olive oil
  • 2 large Idaho potatoes, cut into 1-inch cubes
  • 1 cup baby carrots, or as desired
  • 0.25 cup butter
  • 2 bay leaves
  • 1.5 tablespoons raw sugar
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1.5 cups port wine, or to taste
Instructions:
  • Sautee onions and garlic in a skillet until golden brown, for about 4 to 5 minutes. Mix the onion mixture with hot water and chicken bouillon in a bowl.
  • Sear the roast in the skillet with the onion mixture until browned on all sides, about 4 to 5 minutes.
  • Place the roast in the slow cooker, then generously drizzle olive oil on top. Surround the roast with potatoes and carrots. Pour the broth mixture over everything and add butter, bay leaves, sugar, salt, and black pepper. Lastly, pour wine over the entire mixture.
  • Cook on High for 4 to 5 hours until the meat is tender. Reduce heat to Low and continue cooking for an additional 2 to 3 hours until the internal temperature reaches 145°F (63°C) when tested with an instant-read thermometer.
