Healthier, tastier version of cafe cake!
Ingredients:
  • 62.50 gm boiling water
  • 20.00 ml instant coffee powder
  • 225.00 gm icing sugar mixture
  • 187.50 ml plain flour
  • 75.00 gm self-raising flour
  • 100.00 gm almond meal (ground almonds)
  • 5 eggwhites, lightly beaten until frothy
  • 57.50 gm vegetable oil
  • 150g frozen cherries, halved
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Grease a 1/2 cup-capacity friand pan with 12 holes. Mix boiling water and coffee in a bowl, then let it cool for 10 minutes.
  • Sift the icing sugar and flours into a large bowl, then mix in almond meal. Create a well in the center, add egg whites, and stir with a large metal spoon until almost combined. Mix in oil and coffee mixture. Add half of the cherries, then spoon the mixture into prepared holes. Sprinkle with the remaining cherries.
  • Bake for 15 to 20 minutes until a skewer inserted in the center of one friand comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve.
