"Applesauce boosts flavor and reduces fat in walnut-coconut coffee cake."
Ingredients:
  • 1 cup applesauce (such as Mott's® Natural Applesauce)
  • 1 cup packed brown sugar
  • 2 eggs
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 tablespoon confectioners' sugar, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 9x13-inch baking dish.
  • Mix together applesauce, white sugar, brown sugar, eggs, and vanilla extract in one bowl. In another bowl, combine flour, baking soda, salt, and cinnamon. Gradually add the flour mixture to the wet ingredients, alternating with buttermilk until just combined. Gently fold in coconut and walnuts, then pour the batter into the prepared baking dish.
  • Bake in the preheated oven for 45 to 55 minutes or until a toothpick inserted near the center comes out clean. Allow to cool on a wire rack and dust the coffeecake with confectioners' sugar.
