Vegan coconut butter elevates these quick applesauce muffins filled with raisins and walnuts.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup coconut butter
  • 1 extra large egg
  • 1.5 cups unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup raisins
  • 0.5 cup crushed walnuts
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • Combine the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  • In a small bowl, melt coconut butter. Stir in egg and add to flour mixture. Combine applesauce and vanilla extract. Gently incorporate raisins and walnuts into the batter until a dough forms.
  • Use an ice cream scoop to elegantly portion batter into the muffin liners.
  • Bake in the preheated oven for 18 to 20 minutes, or until the tops spring back when lightly pressed. Allow the muffins to cool for around 5 minutes.
