Yummy carrot pulp muffins with oats, spelt flour, applesauce, and raisins - a delicious way to use juicer leftovers.
Ingredients:
  • cooking spray
  • 1.5 cups carrot pulp
  • 0.5 cup applesauce
  • 2 eggs
  • 1 cup spelt flour
  • 0.25 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground ginger
  • 0.5 cup chopped walnuts
  • 0.33333334326744 cup raisins
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a muffin tin with cooking spray.
  • Combine carrot pulp, applesauce, eggs, and brown sugar in a bowl.
  • Combine spelt flour, oats, cinnamon, baking soda, baking powder, nutmeg, and ginger in a separate bowl.
  • Blend the carrot pulp and flour until a thick batter forms, then gently fold in the walnuts and raisins.
  • Transfer the batter into the muffin tin, gently pressing it down and filling each cup to the brim.
  • Bake in the preheated oven for approximately 25 minutes, or until a toothpick inserted in the center of the muffins comes out clean.
