Hearty and spicy morning muffins packed with raisins, carrots, applesauce, and bran.
Ingredients:
  • 0.5 cup raisins
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 0.66666668653488 cup white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground allspice
  • 0.5 cup nonfat dry milk powder
  • 0.25 cup toasted wheat germ
  • 0.25 cup wheat bran
  • 3 tablespoons uncooked farina hot cereal (such as Cream of Wheat®)
  • 3 egg whites
  • 1.25 cups unsweetened applesauce
  • 1 large carrot, peeled and shredded
  • 0.33333334326744 cup vegetable oil
  • 0.25 cup bran cereal
  • 3 tablespoons raw sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 18 muffin cups with paper liners.
  • Soak the raisins in water to plump, and set aside. In a large mixing bowl, combine all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, allspice, dry milk powder, wheat bran, and farina cereal. Mix well.
  • Pat dry the raisins. In a separate bowl, whisk the egg whites until frothy, then fold in the dried raisins, applesauce, carrot, vegetable oil, and bran cereal. Combine the liquid ingredients with the flour mixture, stirring briefly until just moistened (avoid overmixing). Fill muffin cups about 2/3 full, and top each muffin with approximately 1/2 teaspoon of raw sugar.
  • Bake in the preheated oven until the muffins are set, tops are golden brown, and a toothpick inserted into the center comes out clean, 25 to 30 minutes. Serve warm.
