Hearty barley and apple porridge with crunchy walnuts—a delicious twist on traditional oatmeal for breakfast.
Ingredients:
  • 0.5 cup hulled barley
  • 1 cup water
  • 2 Golden Delicious apples - peeled, cored, and diced
  • 2 cups water, or more if needed
  • 2 teaspoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon butter
  • 1 teaspoon lemon juice
  • 0.25 teaspoon salt
Instructions:
  • In a bowl, combine barley with 1 cup of water. Let it soak for at least 2 hours or overnight. Drain the barley before using.
  • In a saucepan, blend barley, apples, 2 cups water, brown sugar, cinnamon, butter, lemon juice, nutmeg, and salt. Bring to a boil, then simmer on medium-low until barley and apples are soft and water is absorbed, approximately 1 hour. If necessary, add more water as it cooks. Once done, take off heat and mix walnuts into the barley.
