Wholesome muffins bursting with banana, applesauce, carrot, raisins, and flax seed - perfect for kids!
Ingredients:
  • 2 teaspoons coconut oil, or as needed
  • 0.25 cup raisins
  • 1 cup warm water
  • 0.25 cup coconut oil, softened
  • 0.25 cup butter, softened
  • 0.5 cup brown sugar
  • 2 eggs, beaten
  • 2 ripe bananas, mashed
  • 4.5 ounces applesauce
  • 0.66666668653488 cup grated carrot
  • 0.5 cup bread flour
  • 0.5 cup whole-wheat flour
  • 1 tablespoon ground flax seed
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease 12 muffin cups with 2 teaspoons of fragrant coconut oil.
  • Rehydrate raisins in warm water for about 10 minutes in a small bowl, then drain and chop them.
  • In a bowl, cream together 1/4 cup of coconut oil, butter, and brown sugar. Mix in eggs, mashed bananas, applesauce, and grated carrot until well combined. Fold in bread flour, whole-wheat flour, flax seed, chopped raisins, baking soda, salt, and vanilla extract using a rubber spatula. Transfer the batter into muffin cups.
  • Bake in the preheated oven for about 18 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
