Kid-friendly banana muffins made with oats, whole wheat flour, and soy milk for a moist and delicious breakfast on-the-go!
Ingredients:
  • 3 ripe bananas, mashed
  • 1.25 cups white sugar
  • 0.75 cup soy milk
  • 0.33333334326744 cup vegetable oil
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prep your 18 muffin cups with a touch of grease or silicone baking cups.
  • In a large bowl, mix together bananas, sugar, milk, oil, egg, and vanilla extract until well combined. Add oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt; stir until just combined.
  • Distribute the batter evenly among the muffin cups that have been prepared.
  • Bake in the oven until muffin tops are golden brown and a toothpick comes out clean, approximately 18 minutes.
