Moist breakfast muffins with oat bran, fresh cranberries, walnuts, mashed bananas, and almond milk.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup oat bran
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup brown sugar
  • 0.25 cup butter, softened
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 0.5 cup almond milk
  • 0.5 cup chopped fresh cranberries
  • 1 cup coarsely chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 muffin tins with paper liners.
  • Combine flour, oat bran, baking powder, baking soda, and salt by sifting them into a large bowl.
  • In a bowl, cream together brown sugar, butter, egg, and vanilla extract until smooth. Mix in bananas, almond milk, and cranberries. Gently fold in the flour mixture, then stir in walnuts.
  • Spoon 1 tablespoon of batter into each muffin liner.
  • Bake until a toothpick inserted in the center comes out clean, for 20 to 25 minutes, then cool on a wire rack.
