Banana cranberry muffins with walnut streusel - a moist, sweet and tart delight for breakfast or snacks.
Ingredients:
  • 2 eggs
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1.5 cups mashed bananas
  • 1 cup dried cranberries
  • 0.5 cup chopped walnuts
  • 0.25 cup packed brown sugar
  • 3 tablespoons all-purpose flour
  • 2 tablespoons butter, cut into 1/4-inch cubes
  • 0.33333334326744 cup chopped walnuts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and nestle 16 muffin cups with paper liners.
  • In a large bowl, mix together 2 cups of flour with baking powder, cinnamon, baking soda, nutmeg, and salt.
  • In a separate bowl, whisk together white sugar, melted butter, and eggs until smooth. Stir in bananas, cranberries, and 1/2 cup walnuts. Gently fold in the flour mixture until a lumpy batter forms.
  • Divide the batter evenly among the lined cups, filling them 3/4 of the way full.
  • Combine brown sugar and 3 tablespoons of flour in a small bowl. Use a pastry cutter or two knives to cut in cubed butter until you have pea-sized crumbles. Then, stir in 1/3 cup of walnuts.
  • Top the batter with a generous layer of crunchy walnut crumble.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before serving.
