Wholesome banana nut cornbread, easily prepared in a food processor, perfect for meal prep.
Ingredients:
  • 2 tablespoons honey
  • 2 bananas, mashed
  • 0.25 cup vegetable oil
  • 0.5 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup cornmeal
  • 1 cup whole wheat pastry flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 1.5 cups chopped walnuts
  • 1 banana, sliced
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan.
  • Combine the honey, ripe bananas, canola oil, milk, and vanilla in a blender or food processor and blend until smooth.
  • Combine cornmeal, whole wheat flour, baking powder, baking soda, and cinnamon by sifting together. Gently mix the flour mixture into the banana mixture until fully combined. Carefully fold in walnuts and sliced bananas. Pour the batter into the prepared pan.
  • Bake until the top is golden brown, for 40 to 50 minutes in a preheated oven.
