Spicy banana cranberry muffins: a delightful spin on classic banana bread.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 3/4 cup fat-free (skim) milk
  • 3 tablespoons vegetable oil
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup sweetened dried cranberries
Instructions:
  • Preheat oven to 400°F. Grease just the bottoms of 12 regular-size muffin cups with shortening, cooking spray, or use paper baking cups. Crush cereal in a resealable plastic bag using a rolling pin, meat mallet, or food processor.
  • In a medium bowl, whisk together the egg, milk, and oil until well combined. Add bananas and mix well. Gently fold in crushed cereal and allow it to sit for 5 minutes.
  • Blend all remaining ingredients except cranberries until well combined. Add cranberries and mix. Distribute the batter evenly among muffin cups.
  • Bake until light golden brown, for about 20-25 minutes. Remove from pan and transfer to a cooling rack. Serve warm.
